The EcoSmart Slo Cook & Hold Oven electric oven with a 120 lb capacity cooks, roasts, re-heats and holds, all in the same cavity. Cooking can be either timed or probed to ensure correct internal temperature. The programmable thermostat allows the oven to switch from cooking to holding, once set parameters, whether they be time or temperature, are reached. Cooking and holding instructions for your eight favorite recipes can be programmed into this oven, meaning most of what you cook can be consistently and simply prepared the same way every time. That’s important in a commercial kitchen, because customers often return for the same meal they had before. TheSureTemp heat recovery system swiftly restores the internal temperature of the oven when the door has been opened, and sounds an alarm if the door stays open for three minutes. An LED light display allows you to monitor the internal temperature ofyour oven. The 20 gauge stainless steel exterior and magnetically latched door are tough and will withstand life in a commercial kitchen. Three stainless steel wire shelves, and one drip pan with a drain complete this package. The oven sits on 3-1/2 inch casters, two of them rigid, and two swivel with locking brakes. Specifications
